Beef with braised cabbage and bacon

Beef with braised cabbage and bacon is a hearty, flavorful dish that combines tender beef, smoky bacon, and rich cabbage. Here's a simple recipe for this comfort food:

Ingredients:

  • 1 lb (450g) beef (chuck roast or stew meat, cubed)
  • 4 slices bacon (chopped)
  • 1 small head of cabbage (thinly sliced)
  • 1 onion (chopped)
  • 2 garlic cloves (minced)
  • 1 cup beef broth
  • 1 tbsp apple cider vinegar
  • 1 tsp paprika
  • 1 tsp caraway seeds (optional, for added flavor)
  • Salt and pepper to taste
  • 2 tbsp olive oil or butter
  • Fresh parsley for garnish

Instructions:

  1. Cook the bacon: In a large skillet or Dutch oven, cook the chopped bacon over medium heat until crispy. Remove the bacon from the pan and set aside, leaving the rendered fat in the pan.

  2. Brown the beef: Season the beef cubes with salt and pepper. In the same pan, add olive oil or butter if needed and brown the beef on all sides (about 4-5 minutes). Remove the beef and set aside.

  3. Sauté the vegetables: In the same pan, add the chopped onion and garlic, and cook until softened, about 3 minutes. Add the cabbage and cook for another 5-7 minutes, stirring occasionally, until it begins to soften.

  4. Combine the ingredients: Return the browned beef and bacon to the pan with the cabbage. Add the paprika, caraway seeds (if using), and season with salt and pepper. Pour in the beef broth and apple cider vinegar.

  5. Simmer: Cover the skillet or Dutch oven and reduce the heat to low. Let the mixture simmer for about 45 minutes to 1 hour, stirring occasionally, until the beef is tender and the cabbage is fully braised.

  6. Serve: Garnish with fresh parsley and serve hot, either on its own or with mashed potatoes or crusty bread on the side.

Tips:

  • For added richness, you can add a tablespoon of tomato paste or a splash of red wine during the simmering process.
  • Carrots or potatoes can be added to the dish for more texture and flavor.

Enjoy your comforting beef with braised cabbage and bacon!
